Ingredients needed
- 4 eggs, boil until cooked and peel
- 4 purple eggplant, cut lengthwise without breaking up
- 100 ml of water
- Cooking oil to taste
- Spices used
- 100 grams of red basic seasoning (ready to buy or make it yourself)
- 1 teaspoon salt
- 1 tomato, sliced
- 1 lemongrass, memor
- 1 bay leaves
- 3 orange leaves
How to make red seasoning boiled eggs
- Heat the oil, fry eggplant until wilted, then remove from heat. Fry boiled eggs until browned, remove and drain.
- Cook red seasoning with 100 ml of water, salt, tomatoes, lemongrass, bay leaves, and orange leaves until fragrant.
- Add eggplant and eggs, stir until the spices are absorbed.
- Serve warm as a side dish for dawn and iftar.
