How to make Putu Mayang Purple Sweet Potato, Cook with Magic Com


KOMPAS.com – Putu Mayang, a typical Betawi dessert made from starch and rice flour, can be combined with purple sweet potatoes.

Putu Mayang Purple Sweet Potato is made with rice flour, coconut milk, grated coconut, sugar, taro essence, starch, purple yam, and pink coloring.

Material:

  • 200 grams of rice flour
  • 3 tablespoons of sugar
  • 1 1/2 tsp salt
  • 550 ml of dilute coconut milk from 2 grated coconuts with 1 liter of boiled water
  • 1 teaspoon essens taro
  • 3 drops of pink coloring
  • 60 grams of starch
  • Banana leaves to taste
  • 250 grams of purple sweet potatoes, steamed and peel, cut into pieces

Sauce material:

  • 100 grams of brown sugar
  • 25 grams of sugar
  • 2 pandanus leaves
  • 1/4 tsp salt
  • 500 ml of dilute coconut milk, from 2 grated coconuts with 1 liter of boiled water

How to make Putu Mayang Purple Sweet Potato:

  1. Mix rice flour, granulated sugar, salt, coconut milk, taro essence, pink coloring, stir well. Put the rice flour mixture into the magic com, cover and press the cook. Cook until thickened, remove from heat. Add starch, knead until smooth.
  2. Put the mixture into the mold of Putu Mayang, spray extending on a banana leaf. Place the steamed sweet potato on the edge of the dough, roll until the sweet potato is wrapped. Do it until the dough runs out. Steam 10 minutes with steamed magic com.
  3. Sauce: Add brown sugar, granulated sugar, pandan leaves, salt, and coconut milk into the magic com, cover and press cook. Cook until boiling. Lift and strain.
  4. Serve Putu Mayang with sauce.
  5. Tips: Brush the mold with cooking oil so that the Putu Mayang dough does not stick to the mold.
