Mama Yulita Intan again presents a delicious traditional cake recipe: Bugis Mandi. Also known as Putri Mandi, this cake has a sweet and savory taste with a soft texture. Through her TikTok account, @yulitaintann, Mama Yulita shares how to make this typical Indonesian cake with simple steps and ingredients that are easy to find.
Bugis Mandi cake consists of three main elements: sweet coconut unti, chewy skin, and savory coconut milk sauce. With the right technique, the results will amaze anyone who tastes it. Here are the ingredients and steps:

Ingredients:
Coconut Buns:
– 600 gr grated coconut
– 500 gr brown sugar
– 100 ml of water
– 1 tsp salt
2 pandan leaves

Skin:
– 500 gr sticky rice flour
– 50 gr rice flour
– 200 gr steamed potatoes, mashed
– 75 ml instant coconut milk
– 1 tsp salt
– 400 ml pandan water (mix 15 suji leaves + 8 pandan leaves + 500 ml water)
– 1/4 tsp pandan paste

Coconut Milk Sauce:
– 100 ml instant coconut milk
– 100 gr rice flour
– 2 tablespoons cornstarch
– 3 tablespoons sugar
– 4 tsp salt
– 3 pandan leaves
– 750 ml of water

How to make:
1. Coconut Buns: Cook all the ingredients until the coconut is fragrant and the water has reduced. Set aside.
2. Mandi Bugis Skin: Mix sticky rice flour, rice flour, potatoes, coconut milk and pandan water. Knead until smooth. Weigh the skin mixture (35 gr) and coconut kernels (15 gr). Shape into rounds, then steam for 10 minutes.
3. Coconut Milk Sauce: Cook all ingredients over low heat until thickened. Pour over the Bugis Mandi, then steam again for 10 minutes.
