KOMPAS.com – One of the participants of the Indonesian Masterchef Season 12, Malrani made cassava curry with grilled fish according to the theme of today’s challenges, Saturday (3/15/2025).

Cassava curry recipe
Material:
- 1 bunch (300 grams) cassava leaves
- 3 cm galangal (load)
- 1 lemongrass (loading)
- 1 Batang Kecombrang
- 1 tablespoon of salt
- 1/2 teaspoon of sugar
- 1 teaspoon of ebi (brewing, roasting, puree)
- 1,300 ml of coconut milk from 1 coconut
- 2 tablespoons of oil to saute

The seasoning ingredients that are mashed:
- 5 centimeters of turmeric (burn)
- 10 shallots
- 4 cloves of garlic
- 2 red chili
How to make cassava curry
- Mix cassava leaves and one teaspoon of salt into the pan, pour 1,000 milliliters of water. Boil the mixture until the cassava leaves are cooked.
- Remove the cassava leaves, then excuse. Squeeze the water, then mash and let stand.
- Pour the oil into the pan to be heated, add the seasoning that has been mashed. Fried with galangal, lemongrass, and kecombrang until scented. Add ebi, cook and stir again until smooth.
- Add cassava leaves, stir again. Give coconut milk, salt, and sugar. Cook until cooked. Lift, serve.
