Watch out, used cooking oil can be dangerous for brain health


Kompas.com – Consumption of used cooking oil or cooking oil that has been heated repeatedly has the potential to accelerate brain damage and increase the risk of neurodegenerative disease.

The neurodegenerative disease is a condition that gradually damages and destroys parts of the nervous system in the body, especially the brain.

The recent study of mice shows a relationship between long -term consumption of used cooking oil with an increase in neurodegeneration.

Repeatedly heated cooking oil can increase oxidative stress and inflammation, which is a major risk factor for neurodegenerative diseases and other chronic conditions.

Research presented at the Annual Meeting of the American Society for Biochemistry and Molecular Biology (Discover BMB 2024) shows that mice that consume used cooking oil experience higher neurodegeneration rates.

The intestinal axis has an important role in maintaining physiological balance and nerve health.

Consumption of used cooking oil can interfere with this balance, causing an increase in oxidative stress in the liver and inflammation of the liver tissue and large intestine.

This damage contributes to increased levels of endotoxins and lipopolysaccharides that are harmful to brain health.

In addition, secondary research uses Monosodium Glutamate (MSG) shows that mice given used cooking oil are more susceptible to nerve damage.

Chemical changes in used cooking oil

Heating cooking oil at high temperatures causes changes in chemical structure, reducing the content of natural antioxidants, and forming harmful compounds such as trans fats, acrylamide, and aldehyde.

Re -heating oil further worsen this condition, producing more toxic compounds that can damage the nervous system and other body organs.

According to diet experts, repeated oil heating can cause an increase in reactive oxygen species (ROS), which can trigger oxidative stress in the brain and damage neurons.

In addition, used cooking oil also contains oxidized fat and the final product of advanced gups (AGES) associated with various chronic diseases, including neurodegenerative disorders.

How to prevent the negative impact of used cooking oil

To reduce the risks caused by Cooking Oil Consumption, experts recommend diet rich in omega-3, antioxidants, and nutrients such as curcumin and vitamin E which can be found in turmeric, almonds, and other healthy foods.

Consumption of high fiber, polyphenols, and probiotic foods from fermented foods can also help maintain intestinal and liver health.
