Spicy sour soup recipe served at Masterchef Indonesia Season 12

  • ¾ ounces of dry shiitake mushrooms
  • 2 tablespoons of soy sauce
  • ¼ cup of rice vinegar
  • 1 teaspoon of white pepper powder
  • ¼ teaspoon of sesame oil
  • 3 tablespoons of cornstarch (dissolve with a little water)
  • 3 tablespoons of water
  • 2 teaspoons of vegetable oil
  • 1 teaspoon of fresh chopped ginger roots
  • ¼ cup of sliced ​​leeks
  • 4 cups of chicken broth
  • ¼ cup of grated carrots
  • 2 tablespoons of red sliced ​​red paprika
  • ½ cup of bamboo shoots
  • 1 cup of dice tofu
  • 2 large eggs (beaten loose)

How to make spicy sour soup:

1. Soak the dry shiitake mushroom in hot water until it soft about 15 to 20 minutes, then drain and cut thinly.

2. In a separate bowl, beaten soy sauce, vinegar, white pepper powder and sesame oil, then set aside for a spicy acid mixture.

3. Heat the vegetable oil in the pan then saute the ginger, sliced ​​leeks, and shiitake mushrooms for two minutes. After that, pour the chicken stock and cook until it boils.

4. Reduce the heat to medium, then let it boil for five minutes. Add carrots, red paprika, bamboo shoots, tofu, and spicy acid mixtures, then let it boil for five minutes.

5. Increase the heat, then pour the beaten egg into the mendidh soup while stirring. Reduce the heat to medium, then thicken the spicy and sour soup with cornstarch solution.

6. Correction of taste before serving.
