Yellow Spiced Chicken Opor Recipe, a Special Dish for Christmas

Material:

  • 1 chicken, cut according to taste
  • 2 bay leaves
  • 3 lime leaves
  • 1 stalk lemongrass, bruised
  • 500 ml liquid coconut milk
  • 250 ml thick coconut milk
  • 2 tablespoons oil for frying
  • Salt and sugar to taste

Ground spices:

  • 5 cloves of garlic
  • 7 red onions
  • 5 cm turmeric
  • 3 candlenuts, roasted
  • 1 tsp coriander, roasted
  • ½ tsp pepper

How to make yellow spiced chicken opor

  1. Heat oil, saute ground spices with bay leaves, lime leaves and lemongrass until fragrant.
  2. Add the chicken pieces, stir until the chicken changes color and the spices are absorbed.
  3. Pour in the liquid coconut milk, cook over medium heat until the chicken is half cooked. Add thick coconut milk, stir gently so that the coconut milk doesn’t break.
  4. Season with salt and sugar, then cook until the chicken is cooked and the sauce thickens.
  5. Remove, serve yellow spiced chicken opor while warm with white rice or ketupat.
