Yellow Pumpkin Apem Recipe for Isra Miraj Cake Delivery


KOMPAS.com – Yellow pumpkin apem is a traditional cake that is often served as a delivery during Isra Miraj celebrations.

This cake has a natural sweet taste from pumpkin which combines perfectly with the soft texture typical of apem.

As a symbol of gratitude, apem is often served at religious and traditional events in the archipelago.

The following is a recipe for yellow pumpkin apem which is suitable for serving traditional cakes in Isra Miraj celebrations, as reported from the book “Frida’s Simple Recipe” (2018) by @Fridajoincoffee published by Kawan Pustaka

Material A

  • 3 tbsp wheat flour
  • 2 tsp instant yeast
  • 1 tsp granulated sugar
  • 3 tbsp warm water

Material B

  • 240 gr steamed yellow pumpkin, puree
  • 150 gr granulated sugar
  • 1 egg
  • 150 ml concentrated coconut milk

Material C

  • 200 gr wheat flour
  • 1 tsp double acting baking powder

How to Make Yellow Pumpkin Apple

  1. Combine all ingredients A in a small bowl, stir well. Let sit for 5-10 minutes until foamy.
  2. In another bowl, combine ingredients B: pumpkin, granulated sugar, eggs, and coconut milk. Mix well.
  3. Sift ingredient C (wheat flour and baking powder), then add little by little to ingredient B while stirring with a balloon whisk until smooth.
  4. Add the foamy ingredient A to the mixture. Stir until evenly mixed, then cover with plastic wrap or a clean cloth. Rest for 1 hour until it expands.
  5. Stir the mixture again until it doesn’t foam. Pour into a small mold that has been greased with oil. Steam in a hot steamer for 15-18 minutes over medium heat.
  6. Remove the apem, cool for a moment, then serve sprinkled with steamed grated coconut.
