Wandering Competition at Jagatnatha Temple, Dozens of Participants Present Various Appetizing Creations

DENPASAR, BALIPOST.com – Lawar is a typical Balinese culinary dish made from a mixture of processed meat, processed vegetables and typical Balinese spices. This culinary competition is often also held to develop people’s creativity, such as the dancing competition held at Pura Agung Jagatnatha.

This competition was attended by 43 participants from villages or sub-districts and representatives of Sekaa Teruna in Denpasar with various kinds of lawar made to be contested.

Banjar Kalah, Penatih Traditional Village, which is one of the banjars participating in this competition, presents red lawar and star fruit leaf lawar.

Wayan Eka as Kelian Banjar explained that the ingredients used to make these two lawar are pork. For the Red Lawar seasoning, use a typical Balinese base, shallots, garlic and chilies. Add lime leaves and fruit to add a distinctive aroma, and jackfruit as the basic ingredient.

Meanwhile, Starfruit Leaf Lawar is as the name suggests, of course starfruit leaves are the basic ingredient of this lawar. By using kalas seasoning which is a chopped spice filled with coconut juice or coconut milk, and then adding pepper, chili, shallots and garlic.

The method of making it is the same as lawar in general, the meat chosen is the head which is then boiled with spices, don’t forget the jackfruit vegetables and star fruit leaves are also boiled. Meanwhile, the shallots, garlic and chilies are fried.

The first thing to mix is ​​jackfruit and grilled grated coconut, then raw pork which has been chopped until finely then given a large base spice, then brewed with warm water. Then combine all the ingredients then stir until evenly mixed.

Meanwhile, Dangin Puri Kaja Village brought White Lawar and Red Lawar to this competition. Made Sunata, a representative from this village, explained that the ingredients used in making white lawar are pork, jackfruit, garlic, shallots, chilies, roasted grated coconut, Balinese chopped base, lime and coconut oil.

The method of making it is the same as other lawar, namely vegetables and meat are boiled first, then chopped.

Shallots, garlic and chilies are fried. If all the ingredients are ready, stir everything until evenly mixed. Don’t forget to add lime juice for an appetizing taste. (Cahya Dwipayanti/balipost)
