1. Bukittinggi

In Bukittinggi, West Sumatra, there is Warung Kopi Daun which serves coffee in a different way. Warung Kopi Kawa Daun is the place that serves this unique coffee. Instead of being brewed from coffee beans, Kopi Kawa Daun is brewed from coffee leaves so its appearance is more similar to tea.
The way to enjoy this drink is not in a glass, but in a coconut shell so that the aroma and taste is more fragrant. According to the story, it is said that coffee made from these leaves has been known to the Minangkabau people for hundreds of years. Because the coffee beans had to be sold to the Dutch, so people who wanted to enjoy them could only feel the aroma of the coffee from the leaves.
2. Yogyakarta

If you go to Yogyakarta, don’t forget to stop by the angkringan which is located near the Tugu train station and several places in Jogja. The coffee beans usually used to make joss coffee are imported from Klaten.
Sellers roast their own coffee beans and grind them until smooth. This is done so that the aroma and taste of the coffee remains delicious. Apart from that, the boiled water is also cooked in a stove using hot coals, then the charcoal is taken and tapped so that the dust is removed.
The coffee is brewed with hot water and then ready to be placed in the charcoal fire. You can see the coffee exploding when the embers from the charcoal come into contact with the coffee. The dipped charcoal must come from wood charcoal, joss coffee sellers usually use sambi wood which is often found in Kalimantan.

3. Aceh

Aceh is known to have a type of coffee that is famous in the world, namely Aceh Gayo. This area also has several unique ways of serving coffee. One of them is sanger coffee made by a jockey.
The jockey will also brew coffee by filtering it with a special filter and pulling it several times. This coffee brew is also even more delicious with the addition of sweetened condensed milk.
There is also khop coffee. This typical Acehnese kopu khop is served upside down. To enjoy it, you are not allowed to turn the coffee over again before the contents of the coffee are finished. The way to drink it is by sipping the coffee which seeps out slowly.
4. Tulungagung

This ijo coffee or green coffee comes from Tulungagung, East Java. This coffee is known to have a paler color than coffee in general.
To brew it, coffee needs to be roasted in a clay container and burned over a wood-burning stove so that it will produce a delicious aroma.
Kedai Angkringanku is one of the stalls that serves green coffee. Even President Jokowi once came and tasted this green coffee. Sold at a cheap price, this green coffee which has been mixed into cappuccino is only sold for IDR 4 thousand.

Also called rough coffee or kopyok coffee. It is called kopyok coffee because the coffee powder used from these coffee beans is a type of coarsely ground Java Coffee. The coarse coffee grounds are placed in a ceramic cup and then poured with boiling water.
It is said that the water used is usually taken from drilled well water that has been boiled 3 times. Boiling water mixed with coffee grounds will cause the coffee grounds to rise or rise to the top.
The taste of coffee is a bit sour and bitter so it needs to be enjoyed with sweetened condensed milk or liquid sugar.
