Traditional Tumpang Sambal Recipe for New Year’s Servings

Follow the recipe from the book “Step by Step 25 Recipes for Delicious Side Dishes with Sisca Style Chili Sauce” (2015) by Sisca Soewitomo published by Gramedia Pustaka Utama.

Material:

  • 5 large red chilies
  • 6 red bird’s eye chilies
  • 6 red onions
  • 5 cloves of garlic
  • 3 candlenuts
  • 3 tbsp ebi
  • 100 grams semangit tempeh
  • 150 grams fresh tempeh
  • 1 tsp salt
  • ½ tsp ground pepper
  • 1 tsp granulated sugar
  • 2 bay leaves
  • 2 cm galangal, crushed
  • 250 ml coconut milk from 1 coconut

Complementary:

  • 10 long beans, chopped
  • 50 grams of bean sprouts, chopped
  • 1 bunch spinach, chopped
  1. Warm white rice and shrimp crackers
  2. Boil red chilies, cayenne peppers, shallots, garlic, candlenuts, ebi, semangit tempeh, and fresh tempeh until soft.
  3. Blend all the stew ingredients with salt, pepper and granulated sugar until the texture is smooth and soft.
  4. Heat the coconut milk over low heat and add the ground spices that were made previously.
  5. Add bay leaves and galangal to the coconut milk, then cook while continuing to stir so that the coconut milk doesn’t break.
  6. Let the coconut milk boil and the chili sauce thicken, then adjust the seasoning according to taste.
  7. Serve the sambal with warm white rice for the perfect taste sensation.
  8. Add long beans, bean sprouts and boiled spinach as a complement.
  9. Enjoy the chili sauce with shrimp crackers to add a savory taste and crunchy texture.
