Material:
- 5 large red chilies
- 6 red bird’s eye chilies
- 6 red onions
- 5 cloves of garlic
- 3 candlenuts
- 3 tbsp ebi
- 100 grams semangit tempeh
- 150 grams fresh tempeh
- 1 tsp salt
- ½ tsp ground pepper
- 1 tsp granulated sugar
- 2 bay leaves
- 2 cm galangal, crushed
- 250 ml coconut milk from 1 coconut
Complementary:
- 10 long beans, chopped
- 50 grams of bean sprouts, chopped
- 1 bunch spinach, chopped
- Warm white rice and shrimp crackers
- Boil red chilies, cayenne peppers, shallots, garlic, candlenuts, ebi, semangit tempeh, and fresh tempeh until soft.
- Blend all the stew ingredients with salt, pepper and granulated sugar until the texture is smooth and soft.
- Heat the coconut milk over low heat and add the ground spices that were made previously.
- Add bay leaves and galangal to the coconut milk, then cook while continuing to stir so that the coconut milk doesn’t break.
- Let the coconut milk boil and the chili sauce thicken, then adjust the seasoning according to taste.
- Serve the sambal with warm white rice for the perfect taste sensation.
- Add long beans, bean sprouts and boiled spinach as a complement.
