Traditional Gado-gado Recipe with Savory Peanut Sauce

Gado-Gado Peanut Seasoning Ingredients

  • 250 grams of peanuts, fried without oil
  • 5 red chilies, core removed, sliced
  • 5 garlic cloves, fried whole
  • 100 grams brown sugar, fine comb
  • 1 tbsp tamarind water
  • 1-2 boiled potatoes, mashed
  • 2 packs of instant coconut milk (60 ml)
  • 4 glasses of water
  • Salt to taste

Complementary Gado-Gado

  • Lompong to taste
  • Fried tofu
  • Boiled bean sprouts
  • Boiled long beans
  • Boiled cabbage
  • Tomato
  • Lettuce
  • Boiled eggs
  • Shrimp crisp
  • Fried shallots

How to make gado-gado

  1. To make peanut sauce, grind the fried peanuts with red chilies, garlic, brown sugar and salt using a blender or pestle until it becomes a smooth paste.
  2. Once the spices are smooth, put them in a pan and add water and coconut milk. Cook over low heat while continuing to stir gently until the spices are cooked and thicken. Adjust the taste by adding salt or sugar if necessary.
  3. Meanwhile, boil the bean sprouts, long beans and cabbage until cooked, then drain. Cut rice cakes, fried tofu and boiled eggs according to taste as a complement.
  4. On a serving plate, arrange the rice cakes, fried tofu, boiled eggs and prepared vegetables. Sprinkle with cooked peanut sauce.
  5. To serve, add crackers and fried shallots on top of the gado-gado. Serve the gado-gado warm to make it more delicious.
