Tips for Storing Meat to Make It Last Longer

Mistakes in storing meat can pose a risk of bacterial contamination and even food poisoning.

By following proper storage methods, we can prevent these problems and maximize the freshness of the meat.

Here are some meat storage tips from Heather Marold Thomason, a meat expert and founder of Primal Supply Meats.

Storage in refrigerator

Do you need to change meat packaging?

Store meat by wrapping it tightly to reduce exposure to air. According to Thomason, butcher paper is ideal for storing in the refrigerator for several days.

To freeze meat in this paper, place it in a Ziploc bag to keep it out of air and moisture.

Supermarket packaging that uses Styrofoam is safe for the refrigerator, but if you want to freeze it, transfer it to plastic wrap or freezer paper, then seal with a Ziploc bag.

How to store leftover meat that has been opened

If you only use part of the meat, wrap it again tightly. Plastic wrapping is suitable for resealing fresh meat or wrapping meat to be frozen.

However, avoid refreezing meat that has been thawed, because it can damage the texture and taste.

Tips for freezing and thawing meat

Best time to freeze meat

Thomason suggests freezing meat while it’s still fresh, when it still has a few days left to use. This is to give time for the meat to remain usable after thawing.

If freezing at the last minute, label it as a reminder to cook it immediately after thawing. Meat is best used within a few months of being frozen; the shorter the freezing time, the better the quality of the meat.

The correct way to defrost meat

Thaw the meat slowly to maintain its quality. Move the meat from the freezer to the refrigerator the day before. For large pieces of meat, this process can take several days.

If you are in a hurry, you can thaw the meat in cold water. Small pieces can be thawed in about an hour, while large pieces take up to two hours. Avoid thawing in the microwave because it can damage the texture of the meat.

Security tips

Ensure that the meat is still suitable for consumption

Pay attention to the freshness of the meat by checking the smell, color and texture. Fresh meat is usually bright in color, not sticky, and has no odor.

Use paper-wrapped meat within three to four days of purchase, while vacuum-packaged meat can be used or frozen within two weeks of the “packed on” date.
