JAKARTA – Rujak and Asinan are included in the list of the World’s Best Fruit Salads 2024 according to Taste Atlas, a media that contains encyclopedia data on flavors, traditional world dishes, local ingredients and authentic restaurants from various countries in the world.

Meanwhile, rujak from Java is ranked second and asinan fifth. If you want to make these two foods, it’s quite easy.

Rujak itself is made from fresh fruit such as papaya, mango, pineapple, kedondong, and also fruit. Rujak is synonymous with distinctive spices, using a mixture of fried peanuts, brown sugar, shrimp paste, tamarind and cayenne pepper.

Meanwhile, pickles are divided into two types, namely pickled vegetables and fruit. Asinan is usually served with sweet bean sauce which tastes sour and spicy, with crackers and noodles added. Rujak recipe

Material
1 jicama
1/4 papaya
300 grams pineapple
8 water guavas
2 cucumbers
2 red chilies
100 grams brown sugar
1/2 tsp salt
150 grams of skinned peanuts, fried
2 tsp tamarind water

How to make:
1. Cut all the fruit according to taste
2. Grind the red chilies, shrimp paste, salt, brown sugar and tamarind water evenly
3. After that, add the peanuts, then grind them again
4. After that, add all the fruit and mix until smooth. Serve

Pickle recipe

Sauce ingredients:
100 gr fried peanuts
10 pcs curly red chilies
7 chilies
2 cloves of garlic
1 tbsp roasted ebi
60 gr brown sugar
2 tbsp tamarind water
Salt to taste
To taste granulated sugar
Enough flavoring
1-2 tablespoons cooking vinegar
700 ml water (adjust to desired sauce thickness)

Supplementary materials:
To taste boiled tofu
Cabbage to taste (thinly sliced)
1 pc Carrot (thinly sliced)
1 pc jicama (thinly sliced
A handful of Toge
1 pc Cucumber (cut according to taste)
1 head of lettuce
Noodle crackers and red crackers
Fried peanuts for sprinkling

How to make:
1. Boil the chilies and garlic briefly, remove from heat, set aside. Prepare all sauce ingredients. Blend finely fried peanuts, chilies and garlic.
2. Add water when blending. Pour into the pan, then add the brown sugar.
3. Also add tamarind water (filtered), then salt, granulated sugar to taste (optional). Stir well and cook until the sauce boils. Check the taste, turn off the stove. Add enough vinegar (the amount can be according to taste), stir well.
4. Prepare all complementary materials. Wash the vegetables and fruit used, and I use boiled water for the final rinse.
5. To serve, put enough vegetables, fruit & pieces of tofu in a bowl. Drizzle with peanut sauce then sprinkle with fried peanuts.
6. Pickles are ready to be served.
