Tigapo is a traditional snack typical of the Sasak tribe from Lombok which is very popular, especially as an accompaniment to drinking hot coffee. This snack is made from sweet potatoes combined with a sweet brown sugar filling and a soft texture.
Tigapo’s presence at the dinner table is often a favorite among the people of Lombok, both for everyday enjoyment and at traditional events, such as begawe and birthdays. Tigapo is also widely sold in traditional markets.
Here is an easy way to make tigapo:
Ingredients:
• 1 kg cassava (peeled and grated)
• 1/2 kg brown sugar (diced)
• 1/4 kg grated coconut
• Salt to taste
• Oil for frying
Ways of making:
1. Boil cassava
Boil peeled and grated cassava until soft, then drain to remove the water.
2. Mix the ingredients
Mix mashed cassava with brown sugar, grated coconut and a little salt. Stir until the mixture is evenly mixed.
3. Form Tigapo
Take a little dough and make small balls like klepons. Don’t forget to put a little brown sugar in the center of each ball.
4. Fry
Heat oil in a frying pan and fry the tigapo until cooked and brown.
5. Serve
Serve tigapo while still warm and enjoy!
