The origin of plow chili sauce along with the recipe and how to make it



Jakarta (ANTARA) – Sambal seems inseparable from Indonesian people’s eating habits. Not only does it add flavor, chili sauce also provides its own sensation that makes food even more delicious.

In Indonesia itself, there are many different types of chili sauce.

Based on research, 322 types of chili sauce have been discovered, with 257 of them used as a complement to cooking and dishes.

These chili sauces are grouped into two main types, namely raw chili sauce and cooked chili sauce.

There are 119 types of raw chili sauce that are served without the cooking process, as well as 138 types of cooked chili sauce that go through a heating process. One example of cooking chili sauce is the typical plow sambal from Central Java and East Java.

The origin of this chili sauce is believed to come from the ancient habit of farmer mothers who prepared food for their husbands who were plowing the fields. This chili sauce is a practical and delicious food accompaniment for farmers who are working hard in the fields. This chili sauce is also made with a taste that is not too spicy so as not to cause the farmers stomachaches and interfere with their work.

This chili sauce has a typical Javanese-Indonesian food taste, namely it has a sweet and savory taste because it uses Javanese sugar in its making.

Plow chili recipe and how to make it

For those of you who are not used to eating chili sauce or don’t really like spicy food. You can try this chili sauce because it tastes slightly sweet and doesn’t make it too spicy. Here are the ingredients and how to make it:

Material:

  • 5 curly red chilies
  • 2 red onions
  • 1 red tomato
  • Oil for frying
  • Shrimp paste that has been roasted first to taste
  • 2 tablespoons brown sugar/jaggery
  • 2 tbsp tamarind water
  • Salt to taste

How to make:

  1. Prepare the ingredients to be sauteed, namely curly chilies, red onions and red tomatoes.
  2. Saute until the ingredients look wilted, drain and pour the oil over the pestle.
  3. Add brown sugar, shrimp paste and salt, then blend while adding tamarind water.
  4. Keep kneading until the chili sauce is completely smooth and all the ingredients are mixed evenly.
  5. Serve the chili sauce with lime wedges if you like.
