Jakarta (ANTARA) – Soto and goulash are types of culinary dishes typical of the archipelago which are popular among the public and easy to find.
These two dishes both serve sauce with spices and meat or chicken as the main ingredient. However, the two have clear differences. Here are the differences between soto and curry:
Gulai is a typical Minangkabau food, West Sumatra. Meanwhile, soto is a type of food that is influenced by Peranakan Chinese culture. Soto itself now has various types according to the characteristics of each region in Indonesia.

The main difference between soto and curry lies in the spices and sauce. Gulai has spices rich in spices including turmeric, coriander, pepper, galangal, ginger, red chilies, shallots, garlic, fennel, nutmeg, lemongrass, cinnamon and cumin which are crushed, mixed, then cooked in coconut milk.
Meanwhile, soto has spices consisting of turmeric, lemongrass, ginger, galangal, shallots, garlic, candlenuts, coriander, pepper, sugar and salt. However, the use of this spice depends on the type of soto, because there are soto that use coconut milk, such as soto Betawi, and there are soto that do not use turmeric, such as soto Bandung.
Soto soup usually uses chicken or beef stock, which tends to be lighter in taste and clear or yellowish in color.
Meanwhile, curry sauce is thicker and rich in coconut milk and tends to be fatty. The heavy use of turmeric, fennel, cumin and chilies as basic spices for curry sauce gives the curry sauce an orange or even reddish color.
Then, soto and curry have different contents served. Goulash is made from chicken, various fish, goat, beef, offal, or vegetables such as young jackfruit and cassava leaves, which are prepared in a spiced sauce.
Soto is made from chicken, beef, buffalo and offal, usually served with various types of fillings such as noodles, vermicelli, bean sprouts, sliced cabbage, eggs and chips, celery, green onions, lime, chili sauce. However, it depends on the type of soto variation.
Apart from that, soto has a savory, fresh and sour taste from lime juice. Meanwhile, goulash tastes more like spices with spicy, sweet, savory and spicy flavors creamy tends to be oily.
