The Difference Between Salty and Savory, Basic Tastes That Are Often Mistaken


KOMPAS.com – Now, there are five basic tastes recorded, namely sweet, sour, bitter, salty and umami (savory).

Umami is the basic taste that is discovered last. Initially, this taste was recognized by a professor in Tokyo, Japan.

Umami taste is also known as savory in Indonesia. Different from salty, savory provides its own taste sensation.

So, what’s the difference between salty and savory?

Indra Ishak, Head of Research & Development ABC Indonesia, said that umami is obtained from the amino acid glutamate which is usually found especially in high protein food ingredients.

“Savory or umami has been around for a long time, but people find it difficult to describe this taste because it is not sweet, not salty, it is often found in seaweed,” said Indra when met by the media after the “Good Chat with ABC” event in Jakarta, Wednesday (4/ 12/2024).

Meanwhile, the salty taste comes from salt which is widely used as a cooking spice.

“Salt is generally found in several types of food, especially salt. Since ancient times, salt has been common,” said Indra.

The savory taste has the uniqueness of enhancing the taste without relying on added salt or excess sugar.

“The savory taste that is easiest to find is actually in tomatoes. Umami is in tomatoes, although it is not as strong as other food ingredients,” said Indra.
