The combination of spicy and distinctive aroma of chili paste, a recipe that is a must try



Jakarta (ANTARA) – Sambal seems to be an inseparable part of Indonesian people’s eating habits. Every dish feels incomplete without the presence of chili sauce on the dining table.

Not only does it add flavor, chili sauce also provides its own sensation that makes food even more delicious.

In Indonesia, there are so many variations of chili sauce that reflect the culinary and cultural richness of each region.

Based on research, 322 types of chili sauce have been discovered, with 257 of them used as a complement to cooking and dishes.

These chili sauces are grouped into two main types, namely raw chili sauce and cooked chili sauce.

There are 119 types of raw chili sauce that are served without the cooking process, as well as 138 types of cooked chili sauce that go through the cooking process. One of the cooking chili sauces that is very popular among Indonesian people is chili paste. Terasi chili sauce is a type of chili sauce that is most often found in food stalls or even restaurants.

Terasi chili sauce has a savory taste and has a distinctive aroma from roasted shrimp paste. This chili sauce is usually eaten with warm rice and various side dishes such as grilled fish, fried chicken or fresh vegetables.

Recipe and how to make shrimp paste chili sauce

If you want to try making your own chili paste at home, here is the recipe and how to make it:

Material:

  • 10 red chilies
  • 10 red cayenne peppers
  • 5 red onions
  • 1 large tomato
  • 1 tbsp grilled shrimp paste
  • 3 bay leaves
  • 1 stalk of crushed lemongrass
  • 3 slices of crushed galangal
  • 1/2 tsp salt
  • Javanese sugar to taste
  • 5 tbsp cooking oil

How to make:

  1. Puree the red chilies, cayenne peppers, shallots and shrimp paste. You can grind or use a blender to puree the ingredients until they are even and smooth.
  2. Heat cooking oil, then add thinly sliced ​​tomatoes, saute until half cooked.
  3. Add the ground ingredients together with salt, palm sugar and other ingredients. Then, stir until everything is mixed and even.
  4. Next, saute all the ingredients over medium heat until the chili sauce is completely cooked.
  5. Once cooked, the chili sauce can be enjoyed.
