Tasting Bude Grilled Noodles, Noodles Grilled Using a Torch

For those of you fans of processed noodles, try tasting Mie Bakar Bude style grilled noodles which are currently viral on social media. As the name suggests, this stall, which is located on Jalan Bypass Ngurah Rai Number 39, Kuta, Badung, Bali, sells a menu of noodles cooked by grilling them like dishes in luxury restaurants.

“We make the noodles ourselves. So, the noodles are boiled first, then cooked and mixed with spices. Then it’storch (burnt),” said the owner of Mie Bakar Bude, Athirah Wardah Rustam, when met at her shop, Saturday (16/11/2024).

detikBali had a chance to catch a glimpse of the process of cooking Mie Bakar Bude. After being boiled, cooked and mixed with spices, the noodles are grilled in a frying pan. Athira shows how to cook a variant of grilled mozarrella noodles with level one spiciness.

He added four pieces of chicken to the noodle order. Deftly, he stirred the noodles mixed with pepper and red chili sauce. Byurrr! Flames burst from a mini gas cylinder.

Meanwhile, for the original grilled noodle variant, the final cooking process is burned twice. Once burned when cooked on a frying pan, then burned again when the noodles are wrapped in banana leaves and aluminum foil.

“The burning method that I use torch-his. So, the grilled mozarrella noodles are boiled, then fried, and added with other spices. After that, I torch” said Athira.

“If you order original grilled noodles, burn them again after wrapping them in aluminum foil,” he added.

Even though you choose level one, the spicy taste of the noodles, each strand of which is like spaghetti, is immediately felt on the tongue as soon as you take the first bite. The spicy taste combined with the taste of mozzarella cheese seems reminiscent of pizza.

The noodles are thickly seasoned from the sauce and red chili sauce. Chicken meat fried in flour batter makes it taste similar to chicken katsu.

“That chicken fresh, processed that same day. Because if you keep it for days, the taste is different. “I soak (chicken meat) in milk,” added the business management graduate of the National Education University (Undiknas) Denpasar.

Apart from the dominant spicy taste of chili and pepper and cheese, the grilled noodles are also accompanied by several slices of white cabbage. Athira said that white cabbage adds a fresh taste when eating it.

“If it were just noodles, it would taste delicious,” added Athira.

Dian Sopantini is one of the visitors to Mie Bakar Bude. This 29 year old woman from Tabanan admitted that she prefers the original grilled noodle variant which emphasizes the flavor of the spices.

“The mozarrella cheese is just a sweetener,” said Dian.

The original grilled noodle variant at the stall is priced at IDR 15 thousand. Meanwhile, the grilled mozarrella noodle variant is sold at prices starting at IDR 22 thousand. If you want to add chicken strip toppingthe price is only IDR 27 thousand.
