Who says it dish luxury must come from premium materials imported from various parts of the world?
In fact, a luxurious dish that combines Japanese and Indonesian flavors can be created from local ingredients that can be found in traditional markets.
Carrying a luxury and sustainable concept, this is what Lexus has shown in collaboration with Chef Maurizio Bombini from Mauri Restaurant, Bali. Brand This Japanese luxury company holds an annual culinary celebration with a luxurious but local and sustainable concept.
The event with the theme “Reflection of Luxury” was held at Immersion by Lexus, a shared space that can be visited by anyone who wants to relax and taste sustainable luxury culinary delights.
Not just any culinary delight, the food served can only be enjoyed at Immersion by Lexus which is located at Menara Astra, Central Jakarta. All the food was created and modified by Chef Maurizio Bombini.
With the concept of luxurious but environmentally friendly dishes, each selected visitor has the right to taste a complete set menu consisting of appetizers, main dishes and desserts.
This menu is also served with unique, luxurious and unique drinks created by Chef Maurizio.
The first dish that visitors can enjoy is called The Expectations. This dish represents the hope for a more environmentally friendly luxury.
This food is a black potato roll, made from squid ink. The content is fillets fish served with lemon sabayon sauce.
Giving a luxurious impression, black caviar is inserted at the end of the roll. When bitten, the skin is crispy but soft on the inside combined with a delicious savory taste.
The second dish is called The Innovation, the Italian touch is clearly visible in this dish. Torteli homemade with a filling of mascarpone and ricotta cheese it explodes in your mouth in the first bite.

Consome made from lobster skin and head adds a savory impression to this dish. Not only does it explode in the mouth, this dish also gives a warm impression consome or soup like mom makes.
“This tortelli presents a bold new interpretation of a classic dish. Full of delicious flavor in an unexpected way, we replaced the sauce with consomé refined, offering guests an innovative culinary experience that defies traditional expectations,” said Maurizio Bombini as chef.
The next dish is called The Commitment. Barramudi fish from Bedugul, Bali is cooked beautifully. Blending classic techniques and a modern twist, barramudi is paired with light espuma potatoes infused with bright blue peas and butter sauce. Purplish blue butterfly pea flowers also beautify this dish.
The main offering, namely The Vision, embodies Lexus’ vision of sustainable luxury. Slices of wagyu beef with sticky and sweet pumpkin cream melt in your mouth when eaten with a glass of soft drink. Interestingly, this soft drink is made from wasabi.
This dish is accompanied by sauce long pepper trufflecovered with a piece of gold layer to give the impression of luxury and elegance. This dish combines luxury, beauty, elegance and sophistication with extraordinary taste.
To conclude, the sweet dish called The Harmony tastes very special. Guests can experience surprising and delightful dishes with unexpected flavors.
This dish is made by adjusting the flavor combination that visitors want, from chocolate, raspberry, mango, pandan to coconut. When enjoying it, there is a ‘surprise’ that can be felt.
For example, the combination behind chocolate and passion fruit, Chef Maurizio Bombini inserts chili, uniting to create a perfect harmony of taste.
Meanwhile, in the combination of coconut and pandan, interestingly there is a hint of curry in between the sweet and savory taste of pandan coconut. The funny thing is, these feelings don’t collide with each other, instead they are tied to each other.
Each dish is exclusively curated with a blend of high-quality ingredients sourced from local markets. Innovative cooking techniques are used to provide an unforgettable culinary journey. Moreover, the entire menu served is an exclusive curation that is only served at Lexus Feast.
