KOMPAS.com – Ahead of Chinese New Year 2025, you can make Lapis Surabaya as a treat for family and guests or a hamper.
Lapis Surabaya is said to be simpler than lapis legit. Because, the layers are not as many as the legit layers.
You only need to make two separate doughs, namely yellow and chocolate dough, then coat them alternately with strawberry jam.

Yellow lining material:
- 150 gr margarine
- 75 gr unsalted butter
- 2 tbsp sweet white thick
- 175 gr granulated sugar
- 24 egg yolks
Sift together:
- 75 medium protein flour
- 25 cornstarch
- 30 gr powdered milk

Chocolate layer:
- 75 gr margarine
- 50 gr unsalted butter
- 1 tbsp sweet white thick
- 130 gr fine granulated sugar
- 13 egg yolks
Sift together:
- 30 gr medium protein flour
- 20 gr chocolate powder
Spread:
How to make lapis surabaya
1. Prepare three baking pans measuring 30 cm x 15 cm x 4 cm, spread with a thin layer of margarine. Cover with baking paper, brush again with margarine. Sprinkle the baking sheet with a little flour. Set aside.
2. Yellow layer: Beat margarine, butter and sweetened condensed milk until thick. Set aside. Beat the sugar and egg yolks until thick and fluffy. Add the flour mixture little by little. Stir until evenly mixed. Add the beaten butter, stir again until smooth.
3. Pour the mixture into two baking pans, bake in a preheated oven at 175 degrees Celsius for 30 minutes or until cooked. Remove, set aside until cool.
4. Chocolate layer: Do the same with the yellow mixture, bake until cooked.
5. Grease one cake yellow with strawberry jam, top with chocolate layer. Spread the surface of the chocolate again with strawberry jam, pile it again cake yellow. Press gently while compacting.
