Soto Betawi with coconut milk sauce, eaten with fried chips


KOMPAS.com – Soto Betawi is a legendary culinary delight that must be tasted when visiting Jakarta.

The characteristic of Betawi soto is its savory coconut milk sauce, made from a combination of spices, beef stock and coconut milk. It doesn’t just feel like it creamy, but also rich in spices.

Betawi soto ingredients:

  • 2 liters of water for boiling meat
  • 250 grams of beef brisket
  • 450 grams of beef offal (boil until tender, then cut into cubes)
  • 3 tablespoons cooking oil
  • 500 milliliters of thick coconut milk
  • 2 centimeters cinnamon
  • 2 centimeters ginger
  • 2 bay leaves
  • 2 stalks lemongrass (crushed)
  • 1 teaspoon ground cloves

Ground spices:

  • 10 red onions
  • 7 cloves of garlic
  • 3 red chilies
  • 1 teaspoon ground pepper
  • 1 teaspoon cumin (roasted)
  • 1/4 teaspoon ground nutmeg
  • 2 teaspoons salt

Supplementary materials:

  • Sliced ​​spring onions
  • Celery slices
  • Fried onions
  • Tomato
  • Fried chips
  • Soto sauce
  • Pickled cucumbers

How to make Betawi soto:

1. Boil the meat over low heat until tender, then cut into cubes. After that, put the meat and beef innards back into the beef broth.

2. In a separate pan, saute the ground spices until fragrant, then add cinnamon, ginger, bay leaves, lemongrass and cloves. Cook until all ingredients are mixed evenly and fragrant.

3. Add the stir-fried ground spices into the beef stock, then stir until evenly distributed over low heat. Pour the coconut milk into the stew while stirring until the coconut milk boils.

4. Correct the taste with additional salt and seasoning, then serve the Betawi soto while it is warm with complementary ingredients.
