2. Satai Padang
Like Madura satai, Padang satai is also often a treat that you often find. The satai made from beef, tongue and offal is coated in thick peanut sauce. The seasoning consists of ground spices such as lemongrass, shallots, turmeric, ginger and garlic.
3. Satai Tegal
As the name suggests, Tegal’s signature satai, Slawi, is made from goat or young lamb. The meat is diced and can be combined with lard, liver, or kidneys. Satai Tegal does not need to be seasoned with soy sauce when grilled, but is plain. Once cooked, Tegal satai is served with soy sauce and mixed spices.
4. Satai Ambal
This satai made from chicken meat comes from the Ambal area, Kebumen. An interesting fact about Ambal satai is that the seasoning is made from ground boiled tempeh and does not use nuts or soy sauce at all.
