KOMPAS.com – Pho, Vietnamese broth-based food, quite popular in Asian countries, including Indonesia.
This soup is rich in broth and spices, but still simplesimilar to most typical Indonesian food.
You don’t always have to use beef stock, you can make it Pho with chicken stock in a short time, 20 minutes.

Recipe Pho simple chicken
Material:
- 1 tbsp cooking oil
- 300 gr chicken fillet breast or thigh
- 1/2 onion (split into 4 parts)
- 4 cloves garlic (crushed)
- 2 thumbs of ginger (thinly sliced)
- 1/4 tsp cumin
- 2 pieces of star anise
- 1 cinnamon stick
- 1/2 tsp coriander
- 2 cardamom grains
- 5 cloves
- 2 tbsp fish sauce
- 1 liter of chicken stock or beef stock
- 1/2 tbsp salt
Supplementary materials:
- 100 gr vermicelli (soaked in hot water)
- 1 handful of bean sprouts
- 1 spring onion (thinly sliced)
- Coriander leaves to taste
How to make Pho chicken simple
1. Prepare a flat non-stick frying pan, heat it. Grill the onion, garlic and ginger until the surface turns brown and slightly burnt black. Remove and set aside.
2. Add cumin, star anise, cinnamon, cardamom, coriander and cloves. Roast until fragrant. Remove and set aside. Heat one tablespoon of oil, place the chicken fillet pieces in the pan, fry until both sides of the chicken are browned. Lift and drain.
3. Put the roasted ingredients into the pan. Add chicken pieces, fish sauce and salt. Boil all ingredients until boiling and chicken is cooked. Lift.
4. Arrange the vermicelli, bean sprouts and spring onions in a bowl. Pour in the sauce Pho, sprinkle the surface with coriander leaves. Serve Pho while it’s hot.
