Like in Java, Minang cuisine also has differences in each region. Like dishes from the coast and darek or mainland which have their own characteristics.
Nasi Padang is a typical Minang food that is very popular. In the form of rice with various choices of side dishes, such as curry, rendang, beef jerky, and others.
West Sumatra, with the capital city of Padang, has many regions, some from coastal areas (pasisia) or mainland (darek). Each region has different agricultural products. Because of this, the spice mix and cooking are also different.

Here are some differences between coastal and mainland Minang cuisine:
1. Coastal and Mainland Areas in West Sumatra
If you use Minang language, the coast is called pasisia, while the land is called darek. Historically, during the Dutch East Indies era, the West Sumatra region was divided into 2.
Once known as Padang Darat Residency (Padangsche Bovenlanden) and Padang Pesisir Residency (Padangsche Benedenlanden), quoting from Sumbarkita.id (27/4/2024). However, since 1914 they have merged into one, namely the West Sumatra Coastal Residency.

The taste of the food is also lighter and fresher, even though Minang cuisine is famous for its spices. The use of spices in this dish is simpler.
Cuisine from this coastal area also tends to be more sour. This is due to the use of seafood which should not be fishy when served. Some of the side dishes that are usually served are a mixture of grilled fish, chili lado, pindang, patin curry, and even padeh acid.
