Tofu spring roll recipe

Ingredients for Leather:

  • 100 grams of rice flour
  • 50 grams of wheat flour
  • 400 ml water
  • 3 egg whites
  • 2 tbsp cooking oil
  • ¼ tsp salt

Ingredients for Filling:

  • 250 grams of shrimp, peeled, boiled, sliced
  • 1 piece of tofu, sliced, fried
  • 5 lettuce leaves, sliced
  • 100 grams of vermicelli, soak in hot water until soft
  • 2 carrot sticks, shaved

Spread Ingredients:

  • 150 ml sweet chili sauce
  • 1 tbsp lime juice
  • 2 tbsp honey
  • 2 stalks of coriander leaves, sliced
  1. Mix rice flour, wheat flour, water, egg white, cooking oil and salt until smooth. Make a thin omelette using a flat pan measuring about 18 cm.
  2. Take a piece of spring roll skin, spread enough peanut butter. Add shrimp, tofu, lettuce, vermicelli and carrots as filling, then roll until it forms a spring roll.
  3. Mix sweet chili sauce, lime juice, honey, and stir well. Add the sliced ​​coriander leaves, stir again until completely mixed.
  4. Serve tofu spring rolls with sweet chili sauce as a complement.
