Salted Egg Fried Rice Recipe (for 3-4 servings)
Material:
- 600 gr white rice
- 1 tbsp fish sauce
- 7 cloves of garlic
- 8 red onion cloves
- 7 red bird’s eye chilies
- 2 eggs
- 2 spring onions
- 2 tbsp butter
- 4-5 tbsp salted egg powder
- 1 stem curry leaves
- 2 tbsp oil
- ½ tsp salt
- ½ tsp mushroom stock / flavoring
- 1 tsp granulated sugar
Toppings:
- 120 gr chicken thigh filet
- tsp white pepper
- tsp salt
Step:
- Chop the garlic, slice the shallots, green onions, red bird’s eye chilies, and remove the curry leaves from the stems
- Cut the chicken into pieces, marinate with salt and white pepper, mix well
- Heat the oil, add the eggs, stir then add the garlic and shallots, saute until fragrant
- Add the chicken, stir-fry for a moment until slightly browned then add the cayenne pepper, curry leaves, butter and salted egg powder, stir-fry for a few moments
- Add rice, fish sauce, salt, mushroom stock, sugar and green onions, cook for a few moments
- Salted egg fried rice is ready to be served
