Salted Egg Fried Rice Recipe (for 3-4 servings)

Material:

  • 600 gr white rice
  • 1 tbsp fish sauce
  • 7 cloves of garlic
  • 8 red onion cloves
  • 7 red bird’s eye chilies
  • 2 eggs
  • 2 spring onions
  • 2 tbsp butter
  • 4-5 tbsp salted egg powder
  • 1 stem curry leaves
  • 2 tbsp oil
  • ½ tsp salt
  • ½ tsp mushroom stock / flavoring
  • 1 tsp granulated sugar

Toppings:

  • 120 gr chicken thigh filet
  • tsp white pepper
  • tsp salt

Step:

  1. Chop the garlic, slice the shallots, green onions, red bird’s eye chilies, and remove the curry leaves from the stems
  2. Cut the chicken into pieces, marinate with salt and white pepper, mix well
  3. Heat the oil, add the eggs, stir then add the garlic and shallots, saute until fragrant
  4. Add the chicken, stir-fry for a moment until slightly browned then add the cayenne pepper, curry leaves, butter and salted egg powder, stir-fry for a few moments
  5. Add rice, fish sauce, salt, mushroom stock, sugar and green onions, cook for a few moments
  6. Salted egg fried rice is ready to be served
