Rujak Seasoned Chicken Recipe, Cooked Using Coconut Milk


KOMPAS.com – If you are bored with fried chicken, prepare the chicken with spicy and delicious rujak seasoning.

Chicken with rujak spices is cooked with lemongrass, bay leaves, galangal, tamarind juice, coconut milk, red chilies, shallots, garlic, brown sugar and turmeric.

Chicken with rujak spices is suitable to be eaten with warm white rice, see the easy recipe for making it.

Material:

  • 1 chicken, cut into 4 parts
  • 2 stalks lemongrass, crushed
  • 2 bay leaves
  • 3 cm galangal, bruised
  • 1 tbsp tamarind water
  • 400 ml coconut milk from 1/2 coconut
  • 400 ml coconut milk from 1 coconut
  • 3 tablespoons oil for frying

Ground spices:

  • 10 red chilies
  • 8 red onions
  • 4 cloves of garlic
  • 2 tsp brown sugar
  • 1 tbsp salt
  • 3 cm turmeric
  • 4 candlenuts
  • 2 cm ginger

1. Saute ground spices, lemongrass, bay leaves and galangal until fragrant and cooked.

2. Add the chicken and stir until it changes color. Add tamarind water. Stir well.

3. Pour in the liquid coconut milk and stir until it boils.

4. Add thick coconut milk. Cook while stirring until the sauce thickens.

5. Grill the chicken while rubbing the spices in the hot coals until fragrant and browned.
