Material:
- 1/2 chicken, cut into eight parts
- 1 1/2 tsp salt
- 1 lemongrass, memor
- 2 cm of ginger, memor
- 1 pandanus leaves
- 2 pieces of kaffir lime leaves
- 1/2 lime fruit, squeeze the water
- 200 ml of water
Softened seasoning:
- 6 grains of shallots
- 4 cloves of garlic
- 10 curly red chili
- 1 teaspoon salt

How to make rica-rica chicken:
- Coat the chicken with salt, let stand 25 minutes. Fry half cooked. Remove, drain.
- Add the mashed seasoning, lemongrass, ginger, pandan leaves, and orange leaves until the spices are cooked.
- Add the chicken, stir well. Add water, reduce the fire. Close the pan tightly. Cook until the sauce dries while stirring occasionally, remove from heat.
- Add lime juice, stir well, serve.
