Medical oncologist Aru W. Sudoyo explained that heating and burning red meat until it blackens can turn into a carcinogen (substance that triggers cancer).
“If the satay meat turns black, it will contain carcinogenic substances. Of course, this is dangerous because it triggers cancer,” explained Aru when explaining about cancer at the R Rancamaya Hotel, Bogor, West Java, Tuesday (8/10/2019).
Eating grilled meat, according to studies, can increase the risk of cancer. This certainly applies to satay which is generally cooked by grilling with charcoal.
Carcinogens are formed through the combustion process. The amino acids, sugar and creatine in meat will react at high temperatures, forming heterocyclic amines (HCA) so that cancer cells can appear.
