KOMPAS.com – Want a refreshing snack, with sweet, sour and spicy flavors? You can make pickled young mangoes.
Reported from the book “The Aroma of Indonesian Culinary Flavors: Various Rujaks and Pickles” by Lilly T. Erwin (2010) published by PT Gramedia Pustaka Utama, this pickle should be left for about three hours before serving it to guests or family.

Material:
- 500 gr young mango (coarsely grated)
- 100 ml boiled water
- 150 gr granulated sugar
Ground spice ingredients:
- 2 tbsp sliced red chilies
- 1 tbsp sliced garlic
- 2 tbsp salt
Other seasoning ingredients:
- Mix the grated young mango with 1/2 tablespoon of salt, knead for five minutes. Then wash and drain.
- Spice. Add 100 milliliters of boiled water to a pan to boil the ground spices until it boils. Remove, let cool.
- In a large container, mix the cooled spices with mango, granulated sugar and vinegar. Stir, then let sit for three hours before serving.
