Recipe for Wet Fried Ifumi, a Delicious Typical Chinese Noodle Dish


KOMPAS.com – Wet fried ifumi is a noodle dish that has a typical Chinese taste with a chewy noodle texture and rich spices.

This dish is often a choice in Chinese restaurants, especially because of the combination of meat, vegetables and spices that soak perfectly into the noodles.

Its savory and delicious taste makes this dish suitable for serving on various occasions, both for lunch and dinner.

The following is an easy recipe for wet fried ifumi that you can try, quoted from the book “Popular Chinese food” (2004) by Hostess, published by PT Gramedia Pustaka Utama

Material:

  • 1/2 kg wet noodles
  • 100 gr beef, cut into small pieces
  • 1/2 chicken breast, thinly sliced
  • 100 gr shrimp, peeled, halved
  • 2 tbsp dried juhi, soaked, thinly sliced
  • 75 gr straw mushrooms, thinly sliced
  • 1 small plate of mustard greens, cabbage, peas
  • 1 onion, thinly sliced
  • 3 cloves of garlic, finely sliced
  • 1/2 tsp pepper
  • 1 tsp soy sauce
  • 1/2 tsp salt
  • 200 cc chicken stock
  • 2 tbsp cornstarch
  • 2 tablespoons sago water, melt with a little water
  • Sufficient cooking oil

1. Heat a little oil in a frying pan, add the wet noodles and press until slightly thin. Flip the noodles when they are golden brown and cooked evenly on both sides. Remove and set aside. Repeat this process until the noodles are finished.
2. Saute the garlic and onions until fragrant and yellow, remove from heat and set aside.
3. Saute vegetables such as mustard greens, cabbage and snow peas for a while so they stay fresh and bright in color. Remove and set aside.
4. Fry chicken, beef, shrimp and juhi until cooked. Add chicken stock, fried onions, soy sauce, pepper, salt and other seasonings. Thicken with sago starch liquid. After that, add the vegetables, stir briefly, and remove from heat.
5. Serve the noodles on a plate, sprinkle with stir-fried meat and vegetables on top. Serve this moist fried ifumi hot for a more delicious taste.
