The main ingredient
- 1/2 part medium sized chicken
- 1 tbsp tamarind
- 4 tbsp sweet soy sauce
- 2 bay leaves
- 150 ml boiled water
Ground spices
- 1/4 tsp coriander
- 1/2 cm turmeric
- 1 1/2 cm galangal
- 1/2 cm ginger
- 2 cloves of garlic
- 3 cloves of red onion
- 5 cayenne peppers
- 4 red chilies
- Sugar to taste
- Salt to taste
- Cut the chicken into pieces according to taste. Make sure that unnecessary parts such as gizzards and intestines are not used.
- Blend all the prepared spices. Coat the chicken pieces with ground spices and let sit for a while so that the spices absorb.
- Prepare a frying pan, add the chicken along with the ground spices, bay leaves, soy sauce, tamarind and water. Cook until the chicken is cooked and the spices thicken and penetrate the chicken meat.
- Remove the chicken from the pan and prepare the grill. Brush the chicken with the remaining spices, then grill until the surface is browned.
- Turn the chicken back and forth during the roasting process so that it cooks evenly. After that, the grilled soy sauce chicken is ready to be served warm as an accompaniment to white rice or uduk rice.
