KOMPAS.com – Garam masala is a mixture of powdered spices that is widely used in Indian cooking. This mixture usually consists of various spices that are roasted first to release a stronger taste and aroma before being ground.

How to make garam masala

Ingredients:
- 3 tablespoons coriander seeds
- 2 tablespoons cumin seeds
- 2 tablespoons cardamom seeds
- 2 tablespoons whole black peppercorns
- 1 cinnamon stick
- 1 teaspoon whole cloves
- 1 teaspoon freshly grated nutmeg
Steps to make garam masala:
- Heat a frying pan without oil over medium heat. Roast coriander seeds, cumin seeds, cardamom seeds, whole black peppercorns, cinnamon sticks and whole cloves for about 10 minutes. Stir occasionally so that all the spices cook evenly.
- Once the spices start to turn a slightly darker color and give off a strong, fragrant aroma, remove from the pan and let cool.
- Grind the roasted spices using a spice grinder or coffee grinder until fine.
- Finally, add freshly grated nutmeg to the ground spice mixture.
- Store the garam masala in an airtight container and keep it away from heat or direct sunlight so that the aroma and taste are maintained.
