Recipe for Fried Spring Rolls Filled with Shrimp, a Christmas Dish in the Philippines

Fried Badana Spring Rolls:

  • 30-40 pieces of instant spring roll skin
  • 453 grams of ground beef
  • 226 grams fresh shrimp (remove heads and tails, then chop)
  • 2 spring onions (thinly sliced, white and green parts set aside)
  • 1 medium size onion (finely chopped)
  • 156 grams finely chopped carrots
  • 1 chicken egg
  • 1 tablespoon all-purpose flour
  • 2 tablespoons soy sauce
  • 1/2 teaspoon roasted sesame oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 700 milliliters of cooking oil
  • Sweet and sour sauce to taste

Spread ingredients:

  • 1 egg
  • 59 milliliters of water

How to make fried spring rolls filled with shrimp:

1. Mix ground beef, chopped shrimp, white part of scallions, chopped onions, carrots, flour, soy sauce, sesame oil, salt and pepper in a large bowl. Mix all the ingredients using your hands until evenly mixed.

2. Stir the spread ingredients in a bowl, then set aside.

3. Place one sheet of spring roll skin on a dry surface, then put a tablespoon of the meat mixture in the middle. Brush all four sides of the spring roll skin with the spread, then roll until the filling is completely covered.

4. Repeat the same steps until the spring roll filling is finished. After that, freeze the spring rolls for at least one hour inside freezerso that the spring roll filling is dense and doesn’t bubble when fried.

5. Remove the spring rolls from freezer about 10 minutes before frying, then fry the spring rolls in hot oil using medium heat until all sides are golden yellow.

6. Drain the spring rolls with kitchen tissue, then serve warm with sweet and sour sauce.
