Jakarta (ANTARA) – Chicken porridge has become a favorite breakfast menu in Indonesia thanks to its soft texture and light savory taste and is suitable for all groups to enjoy.
Apart from being an option for breakfast, chicken porridge is also often used as a menu of choice when someone feels unwell, because it is easy to digest and provides a comfortable feeling in the stomach.
Recipe and how to make chicken porridge

The main ingredient:
- 300 grams of rice
- 2000 ml water
- Salt and ground pepper to taste
- 3 bay leaves
Broth ingredients:
- 1 kg chicken, cut into 8 pieces
- 1 liter of water
- Galangal, bruised
- 1 stalk lemongrass
- 3 lime leaves
- 4 bay leaves
Softened seasoning:
- 3 cloves of garlic
- ¼ onion
- 1 cm ginger
- 1 cm turmeric
How to make:
1. Make porridge:
- Put all the main ingredients (rice, water, salt, pepper and bay leaves) into a saucepan. Boil until the rice becomes porridge, stirring occasionally so that it doesn’t burn at the bottom.
2. Make chicken stock:
- Saute ground spices (garlic, onion, ginger and turmeric) until fragrant. Add bay leaves, galangal, lemongrass and lime leaves, then stir-fry again until fragrant.
- Add the chicken to the sautéed spices, stir until the chicken changes color and is mixed well with the spices. Add water and cook until the chicken is cooked and the spices are absorbed. Add salt and pepper to taste according to taste.
3. Serving porridge:
- Separate the chicken from the sauce, then shred the chicken according to taste.
- Serve the porridge in bowls, then add the shredded chicken on top. Drizzle with a little sauce, and sprinkle with fried onions and spring onions as a complement. You can also add crackers if you like.
