Siong sira chicken itself means salt-fried chicken. However, in practice in the daily life of Sumbawa people, siong sira chicken is usually prepared with various spices, without using coconut milk, and has more sauce.

Ingredients:

– 1 chicken, cut according to taste.
– 10 candlenuts.
– 8 cloves of garlic.
– 3 finger segments of turmeric.
– 2 tomatoes.
– 3 lemongrass stalks.
– Enough tamarind water.
– Salt and sugar to taste.
– 2 tablespoons ground pepper.
– 8 cloves of red onion, sliced.
– 5 lime leaves.

How to make:

– Blend all the spices except shallots and lemongrass.
– Heat the oil, saute the shallots and lemongrass until fragrant, then add the ground spices and crushed lemongrass stalks.
– Add the chicken pieces, stir well until mixed with the spices, then add 2 liters of water.
– Cook until it boils and the meat starts to become tender, then add salt and sugar to taste.
– Check the taste, if the meat is tender and the taste is right, pour it into a container and sprinkle with fried onions.
– Siong Sira Chicken is ready to be served.
