KOMPAS.com – Fried chili sauce can be made from various ingredients, one of which is quail eggs. If you make it yourself at home for lunch, you can adjust the level of spiciness and thickness of the spices.
This recipe uses 30 quail eggs that have been boiled until cooked, then peel the shells.
The following is a recipe and method for making quail egg fried chili sauce that you can try, quoted from the book “Various Egg Dishes” by Atik Rusmiati and Tetty Y. (2006) published by PT AgroMedia Pustaka.

Material:
- 30 quail eggs (boiled, peeled)
- 250 gr small potatoes (peeled, fried)
- 2 petai planks (peel, set aside the skin)
Seasoning ingredients:
- 8 red onion cloves
- 5 cloves of garlic
- 15 curly red chilies
- 4 slices galangal
- 4 bay leaves
- 2 stalks lemongrass
- 2 tbsp sugar
- 1 tsp salt
- 200 ml thick coconut milk
- Mix the shallots, garlic and curly red chilies, then puree. Heat oil in a frying pan, fry the ground spices until aromatic. Pour in the thick coconut milk, cook and stir until it boils.
- Add quail eggs, potatoes, petai and other spices. Stir until smooth, cook until the spices are absorbed. Lift, serve.
