KOMPAS.com – Mud cake is one of the market snacks that has a soft texture with a sweet taste, usually made from the main potatoes.
You can make potato mud cakes at home with egg yolks, egg white, potatoes, vanilla, butter, coconut milk, medium protein flour, and sugar.

Material:
- 5 egg yolks
- 2 egg whites
- 250 grams of sugar
- 100 ml of thick coconut milk
- 50 grams of margarine, melt
- 1/2 tsp vanilla
- 1/2 teaspoon salt
- 300 grams of potatoes, steamed and puree
- 100 grams of medium protein flour
- 100 grams of young coconut meat, fine shaved
- 100 grams of young coconut pieces
- 50 grams of raisins or jackfruit, cut dice

How to make potato mud cakes:
- Beat egg yolks, egg white, and sugar until white.
- Add coconut milk, margarine, vanilla, and salt. Stir until well blended.
- Add potatoes and flour little by little while stirring until smooth. Then, add young coconut.
- Heat the mud cake mold over medium heat, rub with a little oil. Pour the mixture up to 3/4 molds, then cover and cook until half cooked.
- Add the coconut pieces and jackfruit pieces or one raisin, then cover again and cook until cooked. Lift and serve.
