KOMPAS.com – Apart from crackers and fried eggs, usually fried rice is also served with pickles consisting of cucumbers, carrots, whole bird’s eye chilies and red onions.
The taste of pickled cucumbers is quite varied, from sour, slightly sweet, to spicy. Depends on which piece of vegetable you bite into.
The following is the recipe and method for making pickled cucumbers for friends who eat fried rice, quoted from the book “30 Practical & Delicious Fried Rice Recipes” by Lia Ahmad (2009) published by TransMedia Pustaka.

- 1 cucumber (set aside the middle part, cut into small cubes)
- 1 carrot (peeled, cut into small cubes)
- 20 whole green cayenne peppers
- 10 red onions (cut into 3 parts)
- 20 ml vinegar
- 2 tsp salt
- 1 tbsp sugar
- 300 ml hot water
How to make pickled cucumbers
- Mix sugar, salt and vinegar, then dissolve in hot water.
- Add cucumber, carrot, cayenne pepper and red onion. Stir well. Place in the refrigerator before serving with fried rice.
