KOMPAS.com – Chicken fried rice with spices is an appetizing dish with a unique combination of spice aroma and deep savory taste.

Material
- 300 grams of rice, wash clean
- 3 tbsp cooking oil
- 1 tbsp butter
- 2 onions, finely chopped
- 1 tbsp roasted coriander, puree
- 2 tsp cumin, ground
- 1/2 tsp grated turmeric
- 4 cloves
- 3 cm cinnamon
- 2 cm ginger, crushed
- 2 bay leaves
- 2 stalks lemongrass, bruised
- 1 piece of chicken breast, cut into cubes
- Salt to taste
- 100 ml coconut milk from 1/4 coconut
- 75 grams of frozen peas, steep in hot water
How to make spiced chicken fried rice
- Steam the rice until half cooked, remove from heat and set aside.
- Heat cooking oil and butter in a frying pan. Saute onions, coriander, cumin, turmeric, cloves, cinnamon, ginger, bay leaves and lemongrass until fragrant.
- Add the chicken breast pieces, stir until the chicken changes color and is cooked.
- Add coconut milk and salt. Cook while continuing to stir until the coconut milk reduces and is absorbed into the chicken.
- Add the steamed rice to the stir-fried chicken, stir well. Add frozen peas, cook over low heat until rice is completely cooked.
- Remove the spiced chicken fried rice and serve warm.
