Medan anchovy pepes ingredients:
- 300 grams fresh Medan anchovies (wash and drain)
- 1 chicken egg
- 5 banana leaves (for wrapping)
- Clean stick/toothpick (for attaching banana leaves)
- 1 tablespoon cooking oil
- 2 lime leaves (thinly sliced)
Spices (puree):
- 1 tablespoon sliced red onion
- 1 tablespoon sliced garlic
- 5 candlenuts
- 2 tablespoons sliced red chilies
- 1 teaspoon sliced turmeric
- 1/2 teaspoon shrimp paste
- 1 teaspoon salt
- 1 teaspoon galangal slices

How to make Medan anchovy pepes:
1. Mix the anchovies, eggs, ground spices and sliced lime leaves in a bowl until evenly mixed, then set aside.
2. Spread out the banana leaves and brush with a little cooking oil. Divide the mixture into five parts, then pour each part over the banana leaves.
3. Wrap the dough then pin the banana leaves using a stick, then steam the dough in a boiling steamer for 30 minutes. Then continue grilling the anchovies over hot charcoal until the banana leaves are dry and brownish.
4. Remove and serve the pepes anchovies while warm with white rice.
