KOMPAS.com – You don’t need to travel all the way to Medan, North Sumatra, to enjoy a bowl of Medan chicken soup, you can also make it yourself at home.
Medan’s typical chicken soto is characterized by a yellow sauce and a delicious taste. Usually Soto Medan is eaten with boiled eggs, boiled potatoes, fried shallots and cayenne chili sauce.

Medan chicken soup ingredients:
- 500 gr free-range chicken (cut into 2 and clean)
- 1 1/2 liters of thin coconut milk
- 125 ml thick coconut milk
- Enough cooking oil (for frying)
- 1 stalk lemongrass (crushed)
- 2 bay leaves
- 3 kaffir lime leaves
- 1/2 cm galangal (crushed)
Ground spice ingredients:
- 6 red onions
- 4 cloves of garlic
- 5 candlenuts
- 1 1/2 tbsp ground coriander (roasted)
- 1/2 tsp ground pepper
- 3 cm ginger
- 3 cm turmeric
- 1 1/2 tsp salt
Supplementary materials:
- Boiled eggs
- Boiled potatoes
- Fresh tomatoes (sliced)
- Fried chips
- Fried shallots
- Cayenne pepper sauce
1. Saute the ground spices with lemongrass, bay leaves, lime leaves and galangal until fragrant, then add the chicken pieces.
2. Stir all the ingredients until evenly mixed and the chicken changes color. Pour in the thin coconut milk and cook again over low heat.
3. Once the chicken is tender, remove the chicken and set aside. Fry the chicken in cooking oil until brown, then remove and set aside.
4. Pour thick coconut milk and a pinch of salt into the sauce, then cook while stirring until the coconut milk boils and is cooked. Adjust the taste of the soto sauce with salt and seasoning, then turn off the stove.
5. Shred the chicken meat then put it in a bowl, pour in the soto sauce while it’s hot and serve with complementary ingredients.
