Not only is this recipe delicious, it is also rich in nutrition thanks to the combination of fresh vegetables, mushrooms, tofu and shrimp.
Required Ingredients
Vegetables and Mushrooms:
– 2 carrots
– 150 gr shimeji mushrooms
– 200 gr ear mushrooms
– 1 bunch bok choy
Proteins:
– 2 shrimp tofu, coated with cornstarch
– 250 gr peeled shrimp
Spice:
– 6 cloves of garlic, chopped
– 1 onion, sliced
– 2 spring onions
– 250 ml water
– 3 tablespoons oyster sauce
– 1 tsp granulated sugar
– 1/2 tsp ground pepper
– 1 tbsp mushroom stock
– 1/2 tsp salt
– 1 tsp sesame oil
– 3 tablespoons cornstarch, dissolved in 3 tablespoons water
Cooking Steps
Chop all the vegetable ingredients: carrots, shimeji mushrooms, wood ear mushrooms, bok choy, onions and green onions. Chop the garlic, then slice the shrimp tofu and coat with cornstarch. Fry the tofu until brown.
Heat oil in a pan, saute garlic and onion until fragrant. Add carrots, add water and oyster sauce. Mix mushroom stock, pepper, sesame oil and granulated sugar. Add the prawns and cook until they change color.
Add shimeji mushrooms, wood ear mushrooms, and bok choy. After that, pour in the cornstarch solution while stirring until the sauce thickens. The dish is ready to be served while it’s hot!
