Lontong Kikil is a Farewell Menu at the State Palace, let’s check how to make it

DENPASAR, BALIPOST.com – Lontong Kikil was one of the menus at the farewell event at the State Palace in Jakarta, Sunday (20/10) after the inauguration of Prabowo Subianto and Gibran Rakabuming Raka as President of the Republic of Indonesia and Vice President for the 2024-2029 period.

Lontong kikil, as reported by Wikipedia, is a typical Surabaya dish. This dish consists of lontong and beef kikil (beef feet). In Surabaya, you can find this food for sale by walking around.

For those of you who are curious about the taste of Lontong Kikil, it’s a good idea to try making it at home. Here is one Lontong Kikil recipe that can be put into practice:

Ingredients :

– 500 grams of beef gravel

– 1,500 ml of water to boil gravel

– 2,500 ml of water

– 4 bay leaves

– 4 lime leaves

– 2 stalks of crushed lemongrass

– 1 tsp ground pepper

– Salt, sugar and stock powder to taste

Ground spices :

– 10 red onions

– 5 cloves of garlic

– 3 large red chili peppers

– 3 roasted candlenuts

– 2 segments of roasted turmeric

– 1 kencur segment

– 2 segments of ginger

– 2 key intersections

– 1/2 tsp cumin

– 1 tsp coriander powder

Supplementary Materials:

– Leek

– Fried onions

– Lontong

– Lime

– Candlenut chili sauce

Ways of making :

Boil the gravel, remove from heat, drain and cut according to taste.
Mix the ground spices then saute with bay leaves, lime leaves and lemongrass until fragrant and cooked

Add the gravel pieces, stir well, add 2,500 ml of water, add salt, sugar, stock and pepper, then cook until boiling.

Taste and if it’s delicious, cook over low heat for 10 minutes so that the spices are better absorbed into the gravel.

Serving Suggestions:

– Cut the rice cake according to taste, add enough gravel, sprinkle with chopped spring onions and fried onions. Don’t forget to add lime juice and chili sauce. (Ni Wayan Linayani/balipost)
