How to Make Timbu, a Dompu Culinary that is an Intangible Cultural Heritage



Dompu

One of the typical Dompu foods that is now gaining recognition is Timbu. This traditional cuisine has been recognized as an Intangible Cultural Heritage (WBTB) by the Ministry of Education, Culture, Research and Technology (Kemendikbud Ristek) in 2024.

Timbu is a typical dish made from rice which is stuffed into bamboo, then grilled until cooked. This dish has been part of the traditions of the Dompu people for thousands of years.

Timbu is not an everyday food, but a dish that is only served at special moments, such as religious celebrations, cultural events, and certain traditional ceremonies.

As time goes by, timbu is now easier to find in various places in Dompu. This dish has also become one of the local people’s favorite foods.

Ingredients

  • White sticky rice
  • Coconut milk
  • Salt
  • Bamboo
  • Banana leaf

Ways of making

  • Prepare bamboo pieces with a length of 5-40 centimeters (cm) and a diameter of around 5-7 cm. Clean the bamboo until it is really smooth.
  • Wash the white sticky rice until clean.
  • Insert banana leaves into the bamboo to line the inside.
  • Put the white sticky rice into the bamboo which has been covered with banana leaves.
  • Pour the coconut milk into the bamboo until the rice is submerged, then add salt to taste.
  • Burn the bamboo containing timbu until cooked.
