How to Cook Non-Soft Kwetiau, Secrets of Chinese Food Restaurants


KOMPAS.com – Not only fried rice, one of the favorite dishes from Chinese food restaurants is kwetiau. With its chewy texture, kwetiau is a dish that pampers the taste buds.

However, cooking kwetiau at home often causes problems, namely the texture becomes soft easily.

How to cook kwetiau so it doesn’t get soft

So that the kwetiau you cook yourself remains chewy like in a restaurant, here are some tricks you can try:

Kwetiau tends to get soft more easily than noodles. This is caused by the basic ingredient of flour which is more sensitive to heat. Here are the steps you can follow to keep your kwetiau perfect:

1. Soak, not boil

Don’t boil the kwetiau directly before cooking. It’s best to soak the kwetiau in room temperature water for 10 minutes. If it is still hard, soak it briefly in warm water until it has a springy texture.

After that, drain and cover with ice water to stop the cooking process. This step prevents the kwetiau from becoming mushy due to residual heat.

2. Strain and stretch by hand

To prevent the rice noodles from sticking together, strain and spread them apart using your hands. If not processing immediately, add a little unscented oil to the kwetiau, then spread evenly.

3. Stir-fry without boiling

If you want to cook fried rice noodles, avoid boiling them. Instead, add a little water when stir-frying to get a chewy and soft texture without the risk of mushy rice noodles.

4. Boil for a short time for boiled kwetiau

For a soupy dish, boil the rice noodles for just 2-3 minutes. After that, immediately douse it with ice water so that the ripening process stops. This step ensures that the kwetiau remains chewy even though it is submerged in the sauce.

5. Pay attention to the wet kwetiau

If using wet kwetiau, read the cooking instructions on the packaging. Usually, wet kwetiau is added at the final stage of cooking.
