However, this will certainly be easy to deal with if you know how to cook duck meat properly.

Oki said, the key to processing duck meat so that it doesn’t smell fishy is to marinate it properly.
“So that it doesn’t smell fishy, first marinate (duck meat) with lime. After cutting it, add lime, let it sit for about half an hour, then wash it clean again,” said Oki when met at The Upper Clift Resort & Cafe, Sentul, Regency Bogor, Tuesday (15/10/2024).

Then, continue marinating the duck meat with the marinade used. It can be seasoned with yellow spices made from a mixture of turmeric, onions and a little chili.
The process of marinating the duck can be done for at least one day so that the spices are better absorbed. After that, the duck can be processed straight away.
There are two ways to prepare duck that you can try, namely steaming it and frying it in a pan. Especially for serving fried duck at The Upper Clift Resort & Cafe, Oki prepares the duck by steaming it.

“If it is steamed, the texture of the meat is more intact, while if it is steamed, the meat is usually destroyed,” said Oki.
The process of steaming duck meat takes about four hours so that the results are tender. Only after that is the meat fried in hot oil.
