This chili sauce comes from Manado, North Sulawesi. This sambal has similar characteristics to sambal matah, because it is not served mashed. Instead, the ingredients are cut into small pieces consisting of pieces of cayenne pepper, tomatoes, red onions, basil, spring onions and lime and then poured with hot oil.

3. Sambal Terasi

This chili sauce is very suitable for use as a dip in various foods such as tempeh, fried chicken and fresh vegetables. Shrimp paste gives this chili sauce a distinctive taste and aroma. This chili sauce mixture consists of red chilies, cayenne peppers, shallots, garlic, tomatoes, brown sugar and salt which are ground together with shrimp paste.

4. Plow Sauce

This typical Central Javanese and East Javanese chili sauce has a sweet, savory and spicy taste. This chili sauce is made from large red chilies, cayenne peppers, tomatoes, shallots, garlic, brown sugar and sauteed shrimp paste.

5. Embe chili sauce

Sambal embe, which is also a typical Balinese chili sauce, is known for its savory taste and is not too spicy. Unlike sambal matah, sambal embe is made with cooked ingredients. These ingredients include shallots, garlic and chilies which are sliced, then mixed with shrimp paste and sauteed until fragrant.

6. Andaliman Sambal

This typical Batak chili sauce uses spices that can only be found in Sumatra, namely Andaliman. This chili sauce has a spicy and fresh taste, with ingredients such as green cayenne pepper, garlic, shallots, lemongrass, candlenuts, salt and lime.

7. Green Chili Sauce

This typical West Sumatran chili sauce is made using green chilies. With ingredients including green chilies, garlic, shallots and green tomatoes mashed together. However, before being ground, the ingredients for this chili sauce are sautéed first to make it tastier when served.
